There's a large installed base of these machines and inevitably, a clever individual has released an app to serve that base. It's called ToshLLM and looks interesting (no affiliation). I know some folks here have big GPU power but feel forced into Linux - this may be worth checking out, and the dev is looking for testers. I consider this Mac Pro centric because we are best able to stack massive GPU power for these tasks.
